Controlling humidity reduces baking time, prevents drying
and cracking and improves the quality, color and surface texture of
baked goods. To give customers these results, we offer a steam injection
system that controls moisture levels in the bake chamber as an option
in all BABBCO custom tunnel ovens.
The BABBCO steam injection unit injects steam into the
supply ducts of the oven temperature zone while controlling steam flow
with a PLC controlled modulating valve. Vaisala high-temperature humidity
sensors and a variable-speed exhaust system are used to control the
humidity levels in each oven zone. The PLC control system can be programmed
with recipes that default to pre-determined settings.
